Miquez Cegin is a food journal. Everything published here exists to share traditional Welsh recipes and the pleasure of cooking them at home. This page sets honest expectations about what our content is, and what it is not.

Recipes Are Editorial Content

Each recipe reflects how we cook a dish in a home kitchen: our ingredients, our equipment, our timing. Recipes are shared for general information and inspiration. They are not professional instruction, and following them is always at your own discretion and judgement.

Not Nutrition or Medical Advice

Nothing on this website is nutritional counselling, dietary therapy or medical advice. We write about butter, lard and traditional cooking fats because that is how Welsh food has long been made, not because we are qualified to tell you what to eat. Choices about your diet belong to you and, where relevant, to a qualified professional. Allergies and Dietary Restrictions

Our recipes freely use common allergens including dairy, eggs, gluten and fish. Ingredient substitutions change results and may introduce allergens we never mention. Always read labels on the ingredients you buy, and never rely on this website to determine whether a dish is safe for a person with allergies or intolerances.

Kitchen Safety

Cooking involves heat, sharp tools, hot fat and raw ingredients. Follow safe food handling practice: cook meat and fish to safe temperatures, keep raw and cooked foods separate, and supervise children in the kitchen. You are responsible for safety in your own kitchen.

Results in Your Kitchen

Ovens, pans, altitude, humidity and ingredient brands all change outcomes. Our photographs show dishes as they came out for us on a given day; yours may look different and still be delicious. Cooking times and yields are good-faith estimates, not promises.
